I’m not a huge fan of sandwiches, I’ll be the first to admit. However, since my successful gardening adventures that
I’ve written about before, I am quick to eat a sandwich with fresh ingredients now. There is nothing like the taste of fresh herbs & vegetables, especially cucumbers. Yum!

To spruce it up and make the sandwich a little more interesting, I made a quick dill cream cheese spread that was delish all by itself.
Easy Dill Sandwich Spread
You will need:
1 package (8 ounces) low fat cream cheese
3 TBSP chopped, fresh dill (or dried will work too)
Mix together. You can add a pinch of salt & pepper or even some minced garlic.
Another option: You can also replace the fresh dill with 1 package Simply Organic Dill Dip Mix.
* Store in a tupperware container for up to 2 weeks.
Note about the photo: I took this photo with my iPhone (yes, I seriously need a new camera) but I had this grand idea to open up one of my bajillion colorful cookbooks and turned to the first 2 blank pages. I propped up the back of the book and used it as a backdrop for the photo. Pretty cool idea.
