There are certain times where I just feel like having something out of the ordinary for dinner, and this night was one of those times. I wanted comfort food. I wanted something quick, something easy, and something delicious.
Thankfully, we had a lot of the ingredients on hand. The ham was already cooked and ready to go, it just needed to be warmed in the oven. The collard greens were on the stove, the cornbread was baking and the mac-n-cheese was almost done. The last step in this process was cooking up the sweet potato casserole and simmering the black eyed peas. It truly was a quick & easy meal that tasted like I’ve been slaving over the stove all day.
One of the best things about this meal was how easy it was and how fast it was to make, especially the ham!

For my daughter’s plate, we simplified it a little bit, as you can see. She had her requests and of course, we made a little plate for her. Her favorite part? The ham of course.
