“BBQ Pea Crusted Tofu with Avocado Dip”


1 package extra firm tofu, pressed and drained

cup soy sauce

1 tablespoon vinegar

2 cloves garlic, chopped

1 cup finely crushed BBQ World Peas

2 ripe avocados

cup plain Greek yogurt

3 tablespoons chopped cilantro

2 tablespoons lime juice

Salt and pepper to taste


Cut the tofu into strips. Combine the soy sauce, vinegar, and garlic. Marinate the tofu in the soy sauce mixture for at least 15 minutes, or up to several hours. Roll the tofu strips through the crushed BBQ World Peas to coat. Sear the tofu in a lightly oiled cast iron skillet for 3 to 4 minutes on each side.

Blend avocados, yogurt, cilantro, lime juice, salt and pepper in a food processor until smooth. Serve with BBQ tofu.
